clayey piedmont soils of medium consistency tending to limestone.

100% Lambrusco Grasparossa.

PLANTING DENSITY:

3500 vines/ha spurred cordon.

VINIFICATION:

The grapes go immediately into the soft press without passing through the destemming machine, only the flower must is used, to have a finer color and fragrance. Then the cleaning of the must takes place, which is fermented at low temperatures and the base wine is obtained.

REFERMANTATION:

Re-fermentation in the bottle on its own yeasts, at low temperatures for at least 12 months, with subsequent disgorgement and total removal of sediment.

STORAGE:

2 years, depending on vintages.

COLOR:

bright light pink, with very fine and persistent perlage.

PERFUME:

scents of berries and cherry.

TASTE:

dry, persistent and enveloping.

ACCOMPANIMENT:

cured meats, first courses with meat ragout, white meats and blue fish.

SERVING TEMPERATURE:

6-8°.
